Quick & Easy Overnight Oats! 🍓

Hi everyone! How are you? Today’s post is short but deliciously sweet! 😋 The other evening my mum and I made overnight oats together and after discovering the next morning just how good they were I thought I would share how my one was made with you!

It is an incredibly easy recipe and it’s only downside is that you run out of fruit through wanting to make more! 😂 This was my first time trying overnight oats but the subject of them has been circulating around the house as my sister used to make them to take with her to college and so I thought it was time to give them a try too! Here we go! (Keeping in mind that these ingredients are my choices so you can include anything and add as much of it as you like!)

Ingredients

  • Gluten free porridge oats – I used gluten free porridge oats as my sister is a coeliac and so in making the overnight oats we had these out and I’m glad I did use them as they soak up less liquid and weren’t stodgy yet were still filling.
  • Lactose free milk and yogurt – since I’ve started eating lactose free dairy products I have found that cheese doesn’t bring on flare-ups and so I have been able to introduce it back into my diet! 😆 (Pizza…I have missed you 😭😂) and I decided to swap over entirely with all the dairy products I consume as although they take longer to affect me, they get me in the end and so I’m happy that although the precautions I take are small against my pain they do impact it and mean that I can start to have as much control over it as possible on my end.
  • Berries – I chose strawberries, blackberries and blueberries 😋
  • Pecans – I wanted to add some texture and pecans and strawberries together felt like a good idea 😂

Method

All you have to do is chop up the fruit/nuts if you would prefer to do so and add them into a container, bowl or jar that has milk, yogurt and oats and mix them all together. It is then ready to be placed in the fridge overnight until morning! ⛅

If you don’t want to add milk or any of the available substitutes (such as almond milk, soya milk, goat’s milk, hazelnut milk ect.) you can add water as the liquid is really only there for the oats to absorb (aside from to add flavour). Again if you would prefer not to add yogurt or any alternatives to that you can leave it out as the fruit packs the most flavour into the recipe (although I would recommend you add some kind of yogurt as I think it made it taste all the more refreshing and healthy as your getting all you need out of a breakfast to set you up for the day ahead!).
